barley risotto with peas
Barley seems to take a long time to cook risotto-style- you might have to allow as much as an hour for it. Don’t even start your meat until you know your barley is sufficiently tender. It expands a great deal so allow .25 cups of barley (dry) for each serving. Toss your peas in at the very end- they take zero time to cook and only need to warm through.
